40 Second Keto Dark Chocolate Cupcakes

40 second Dark Chocolate Cupcakes
Here’s another quick and easy cupcake recipe that you “bake” in the microwave for 40 seconds! This recipe is a favorite of my chocolate-loving husband. He freely admits that these cupcakes are as rich, decadent and fudgy as a traditional cupcake. He doesn’t miss the sugar at all and neither will you! This recipe yields three cupcakes, so it’s perfect when you want to satisfy a chocolate craving, but don’t want too many extras hanging around to tempt you.

40 Second Keto Dark Chocolate Cupcakes
Makes 3 cupcakes

Cupcakes:
2 tablespoons almond or pecan flour
2 teaspoons coconut flour
1 tablespoon unsweetened dark cocoa powder 
1/4 teaspoon instant coffee powder (optional, but enhances chocolate flavor)
1-1/2 tablespoons granulated erythritol sweetener 
A pinch of salt
1/2 teaspoon baking powder
1 tablespoon butter, melted
1 large egg
5 drops dark chocolate stevia or monkfruit extract, or to taste
1/4 teaspoon vanilla extract
1 tablespoon unsweetened almond or coconut milk (or strong brewed coffee for a mocha flavor)

Dark Chocolate Frosting:
1 oz. unsweetened baker’s chocolate, chopped
3/4 teaspoon refined coconut oil
1 tablespoon unsalted butter, room temperature 
2 oz. cream cheese, room temperature 
4 oz. mascarpone cheese, room temperature 
1/3 cup powdered erythritol sweetener 
1 tablespoon unsweetened cocoa powder 
1/4 teaspoon vanilla extract
1-2 tablespoons heavy cream (or as needed to reach the desired consistency)

1. In a small bowl, combine the almond or pecan flour, coconut flour, cocoa powder, instant coffee powder, granulated sweetener, salt and baking powder. Whisk to combine and remove any lumps.

2. Add the melted butter, egg, stevia or monkfruit drops, vanilla extract and milk or coffee; whisk until well combined.

3. Evenly divide the batter between three silicone muffin cups and microwave on high for 40 seconds or until the cakes have risen, look dry and spring back when touched near the center. (The time needed for cooking may vary, depending on the wattage of your microwave.) Alternatively, you can bake them in a 325 degree Fahrenheit oven for 15-18 minutes. Move to a wire rack and cool completely.

4. To make the frosting, in a medium, microwave-safe bowl, combine the chopped baker’s chocolate and coconut oil. Microwave on high in 15 second intervals to melt the chocolate. Let it sit for a minute or two and then stir until smooth. (If you would prefer, you can melt the chocolate and coconut oil in a heat proof bowl over barely simmering water.) Set melted chocolate aside to cool to lukewarm. 

5. In a large bowl, using an electric mixer, whip the butter, cream cheese and mascarpone cheese together until smooth. Beat in the powdered sweetener and cocoa powder, scraping the sides of the bowl as needed.

6. Add the melted chocolate and vanilla extract and beat until combined. Add the heavy cream, one tablespoon at a time, until a spreadable consistency is achieved. (Note: This icing recipe makes enough to frost 6 cupcakes, so more than you will need. Store any leftovers in an airtight container in the refrigerator for up to a week.)

40 Second Keto Lemon Cupcakes
You don’t have to wait for a special occasion or dirty the entire kitchen to enjoy a few cupcakes! These light and delicious cupcakes bake in the microwave in about 40 seconds. Normally, I don’t think about the microwave when I want to bake a cake, but I have found that keto mug cakes made in a microwave rise beautifully and have a light, tender crumb. Just be sure you don’t overcook them or they can become tough. Silicone cupcake liners are microwave-safe, come in a variety of fun colors, are non-stick and hold their shape during cooking, so that’s what I use. (You can use paper liners, but you’ll need to support them in a microwave-safe cup so the cupcakes retain their shape during the cooking process. If you decide to use paper liners, make sure there is no metal in the liner or its printed design.) This quick recipe makes only three cupcakes, which is just enough to share with one or two friends. There’s no reason not to have a little party tonight!

40 Second Keto Lemon Cupcakes
Makes 3 cupcakes

Cupcake Ingredients:
1/4 cup almond flour
2 teaspoons coconut flour
1 tablespoon granulated erythritol sweetener
1/2 teaspoon baking powder
A pinch of salt
1 large egg
1 teaspoon lemon juice (or almond milk)
1/2 teaspoon lemon zest (or 1-2 drops of food grade lemon essential oil)
1/2 teaspoon vanilla extract
5 drops monkfruit extract (or liquid stevia)
1 teaspoon melted butter or ghee

Lemon Cream Frosting:
2 ounces cream cheese, room temperature 
2 tablespoons unsalted butter, softened
4 ounces plain mascarpone cheese, room temperature
1/4 cup powdered erythritol sweetener 
1 teaspoon vanilla extract
1/4 to 1/2 teaspoon lemon extract, to taste
1-2 tablespoons heavy cream

Sugar free sprinkles (optional)

1. In a small bowl, combine the first five dry ingredients (almond flour through salt) with a fork until thoroughly mixed; set aside.

2. In a separate bowl, whisk together the egg, lemon juice or almond milk, lemon zest, vanilla extract, monkfruit extract or stevia and melted butter.

3. Add the dry ingredients to the wet ingredients and whisk until just combined. Divide the batter equally among three silicone cupcake liners (or small greased ramekins). Microwave on high for 35-40 seconds or until the cakes have risen, look dry and the tops spring back when lightly touched in the center. Do not overcook! (Note: Cooking time may vary depending on the wattage of your microwave. Instructions for baking in the oven are provided below.*) Remove the cupcakes from the microwave and cool on a wire rack completely while you make the frosting.

4. To make the frosting: Whip together the room temperature cream cheese, butter and mascarpone cheese with an electric mixer until light and fluffy. Add the powdered sweetener, extracts and beat until combined. Add the heavy cream, one tablespoon at a time, until your frosting reaches the desired consistency. Taste and adjust sweetness to your liking. If desired, spoon the frosting into a piping bag with a decorating tip and frost your cupcakes or spread about 3 tablespoons of frosting onto each cupcake.

5. This frosting recipe yields more than you will need for 3 cupcakes, which allows for dividing into batches and coloring each differently using gel food colors (as shown). Store any leftover frosting in an airtight container in the refrigerator and save for another use. It will keep well for 4-5 days. Bring to room temperature and rewhip if needed to restore spreading consistency. 

*To bake the cupcakes in the oven, bake in a preheated 325 degree F oven for 16-18 minutes or until a toothpick comes out clean when tested and the tops spring back when lightly touched near the center.

Blueberry Mug Muffin with Easy Cultured Butter



I was lying in bed this morning, thinking about what I might want for breakfast, when an idea flashed into my mind: Blueberry Muffin. This is a twist on my favorite Mug Cake recipes but, instead, it's a Mug Muffin! And to make it even extra healthy, I mixed together kefir cheese and butter to create a simple and quick cultured butter as a spread. YUM...so delicious! I highly recommend using the smaller wild Maine blueberries for this recipe so they won't sink to the bottom (like mine did in this picture) but, even if the bigger variety of berry is all you have, it will still taste amazing, especially topped with creamy butter. (It would also be great made with raspberries.) This delightful breakfast was a great way to start a beautiful summer day in Maine!

Blueberry Mug Muffin
Makes 2 servings

2 tablespoons almond flour/meal
2 teaspoons coconut flour
2 teaspoons LaKanto Monkfruit sweetener (or other erythritol sweetener)
1/4 + 1/8 teaspoon stevia powder (I used Sweet Leaf brand)
A pinch of salt
1/2 teaspoon baking powder
1/8 teaspoon lemon extract or 1 teaspoon lemon zest (or 2 drops dietary-grade lemon essential oil)
1/2 teaspoon vanilla extract
5 drops Lemon Drop stevia (I used Sweet Leaf brand)
1 large egg
1 tablespoon butter, melted (use ghee for dairy-free)
1 tablespoon small wild blueberries (fresh or frozen)

1. Melt the 1 tablespoon of butter in a mug by microwaving on high for about 15 seconds; set aside.

2. In a small mixing bowl, combine the almond flour, coconut flour, sweeteners, salt and baking powder. Stir with a fork until well combined and no lumps are visible.

3.  Add the melted butter, extracts, lemon stevia drops, and egg. Whisk with a fork until a smooth batter forms. Take a paper towel and coat the bottom and sides of the mug with any butter remaining in the mug. Add 1/2 of the blueberries to the batter and gently fold to incorporate and pour into the prepared mug. Top batter with remaining berries.

4. Microwave on high for about 45 seconds.* Remove and test by touching the muffin near the center. It is done when the batter on top of the muffin looks set and springs back when touched lightly. If additional cooking time is needed, microwave at 10 second intervals and retest. Do not overcook. Allow the muffin to cool in the mug for 1 minute.

5. Invert the muffin onto a serving plate and allow to cool for 1-2 minutes. Serve immediately with butter or store leftovers in an airtight container at room temperature for 1 day. This recipe makes 2 servings.

*To bake in the oven, divide batter into two greased muffin tins or ramekins and bake at 325-degree Fahrenheit for 16-18 minutes or until toothpick comes out clean when tested or muffins spring back when touched near the center. 

These muffins can be microwaved or baked in the oven. Both methods are equally delicious!

Easy and Quick Cultured Butter: Mix together 2 tablespoons softened butter, 1 tablespoon kefir cheese (to make kefir cheese, click here) and 1/4 teaspoon honey.  This probiotic-rich buttery spread is excellent on muffins, pancakes and waffles.

Coco-Mocha Mug Cake



I just returned from vacation and I'm not quite ready to stop being on vacation! This afternoon, to extend the fun experience, I made this marvelous Keto Mug Cake and ate the whole thing for my lunch. It's grain-free, sugar free and easily can be made dairy free (by substituting ghee for the butter), but it's far from flavor free! The combination of coconut, coffee and chocolate is so delicious. Since Mug Cakes are "baked" in the microwave and can be whipped up in a matter of minutes, I can be spontaneous and carefree about having one. This tender cake is similar to a sweet indulgence I was tempted to have while on vacation, but without all the gluten, sugar, carbs or guilt! Mmmm...this was a great way reward myself for having made healthy choices on my trip and to welcome myself back home.

Coco-Mocha Mug Cake
Makes 2 servings

1-1/2 tablespoons butter, melted (or ghee for dairy free)
2 tablespoons almond flour/meal
2 teaspoons coconut flour
1 tablespoon unsweetened cocoa powder
1/2 teaspoon instant coffee (or substitute 1 tablespoon strong brewed coffee and omit the coconut milk)
2 teaspoons LaKanto Monkfruit sweetener (or other erythritol sweetener)
1/4 teaspoon stevia powder (I used Sweet Leaf brand)
A pinch of salt
1 tablespoon unsweetened shredded coconut
1/2 teaspoon baking powder
1 large egg
5 drops dark chocolate stevia or regular (I used NOW Better Stevia brand)
1 tablespoon coconut milk

Optional toppings (pictured): shaved or chopped dark chocolate (70% or higher), toasted unsweetened shredded coconut or flakes. (Optional toppings are not included in nutritional information.)

1. Prepare your mug by melting the butter or ghee in it (microwave for 15 seconds or so); set aside to cool slightly while you prepare the batter.

2. In a small mixing bowl, combine the almond meal, coconut flour, cocoa powder, instant coffee (if using), sweeteners, salt, shredded coconut, and baking powder until well mixed.  Add the melted butter, egg, stevia drops and coconut milk.  With a fork or whisk, stir until well combined.

3. With a paper towel, coat the inside of your mug with any melted butter still remaining in the mug. Pour in batter and microwave for about 45 seconds until cake is done and springs back when touched near the center. (The time needed for cooking may vary, depending on the mug you use and the wattage of your microwave. It's best to begin with 45 seconds and, if more cooking is needed, microwave in 10 second intervals until done.)

4. Allow to cool in the mug for at least 1 minute, then invert cake onto a serving dish and cool for an additional few minutes until warm, but not too hot.  Sprinkle with optional toppings, if desired. Serve immediately. Store any leftovers in an airtight container at room temperature and eat within 1 day. This recipe makes 2 servings.

Shortcake in a Mug



It's strawberry season again and there's nothing that says summer like Strawberry Shortcake! I normally don't eat a lot of fruit but, when it's fresh, in season and local, I usually indulge in a pint or two. This is my favorite way to eat strawberries. The best part about this recipe is how quick and easy it is to make the shortcakes. Taking only 45 seconds in the microwave, this mug cake will be ready in minutes to split and share with a friend, topped with sweet berries and a dollop of whipped coconut cream laced with vanilla. (If you can't find a friend to share it with, save half of the shortcake for later.) The cake itself isn't overly sweet, so the flavor of the berries will shine forth. The slight hint of lemon gives it a nice touch and will go well with any fruit. Enjoy the summer!

Shortcake in a Mug
Makes 2 servings

1/4 cup almond flour
2 teaspoons golden flaxseed meal or coconut flour
1 tablespoon Lakanto Monkfruit sweetener (or other erythritol sweetener)
1/2 teaspoon baking powder
A pinch of salt
1 egg, slightly beaten
1 teaspoon lemon juice (or almond milk)
1/2 teaspoon lemon zest (or 1-2 drops dietary grade lemon essential oil)
1/2 teaspoon vanilla extract or unsweetened vanilla powder
5 drops monkfruit extract or liquid stevia
1 teaspoon melted butter (or ghee for dairy free)

1. In a small bowl, combine the first five dry ingredients with a fork until thoroughly mixed.  Add the egg, lemon juice or almond milk, lemon zest (or essential oil), vanilla extract, monkfruit extract or liquid stevia.

2. Melt the butter in an eight-ounce mug or ramekin and add to the batter mixture. With a paper towel, wipe any butter remaining in the mug around the sides and on the bottom of the mug; set aside.

3. With a fork, beat the cake batter until all ingredients are combined and pour into the greased mug or ramekin. Microwave on high for about 45 seconds or until the cake has risen, looks dry and the top springs back when touched lightly in the center. (Note: Cooking may take a bit less or more time, depending on the wattage of your microwave and the mug you are using. You may need to experiment to discover the best amount of time needed to cook your cake. When you have done this, make a note of the mug used and the proper cooking time so, the next time you make a mug cake, you'll know what works best for you.)

4. Allow the cake to cool for a few minutes before running a sharp knife around the edge and inverting your mug to release the shortcake.  Split the cake into two servings, top one half of the shortcake with your favorite berries and whipped cream or whipped coconut cream (recipe below).  Repeat with the other half of the shortcake or cool and store in an airtight container for later. Serve and enjoy.

To make whipped coconut cream: Place a can of full-fat coconut milk in the refrigerator overnight. Do NOT shake the can!! Open and spoon out the thickened coconut cream at the top and discard the liquid (or use for another purpose). Add stevia powder and vanilla to taste and whip with a whisk or fork until well combined and it has the consistency of whipped cream. Serve immediately or store in the refrigerator.

Simple 1-Minute Chocolate Mug Cake




You can have this low carb, grain-free cake and eat it too! Mug cakes may be the quickest and easiest dessert you'll ever make. They are "baked" in the microwave* in less than a minute (depending on the wattage of your microwave) and are a special treat for low carbers. Most recipes I've tried call for alternative "nut flours," such as almond flour.  The problem with those recipes is that the cake usually ends up being grainy and dry. My recipe is different because it uses nut butter as a base which creates a moist cake with a tender crumb. To achieve consistent success making Mug Cakes, it may take a bit of experimentation with different mugs and the cooking time. Once you find the perfect combination, write it down so you'll remember. I've discovered that a thicker-walled mug, small bowl or ramekin works best.  The microwave times given are approximate.  Start with the shortest time and, if needed, continue microwaving at 10-15 second intervals until the cake is puffed up and the batter is just beginning to be dried out on the top.  It will continue to cook for a minute after being removed from the oven.  The extra time it might take to learn which mug and cooking time is best for your microwave will be worth it!  I believe that this and other Mug Cake recipes will become favorites for those occasions when you crave a special treat. Simple 1-Minute Chocolate Mug Cake
Makes 1 small cake (2 servings)

2 tablespoons nut butter of choice
1 egg
1 tablespoon unsweetened cocoa powder
1/2 teaspoon stevia powder (I used Sweet Leaf brand), or to taste
A pinch of salt
3/4 teaspoon vanilla extract
2-3 teaspoons coconut milk (or any milk) to achieve a cake-like batter consistency
1/4 teaspoon apple cider vinegar
1/16 teaspoon baking soda

In a small bowl, whisk together all of the ingredients until well blended. Pour batter into a mug or two ramekins that have been sprayed with non-stick cooking spray or greased with butter or ghee.  Microwave for 40 seconds to 1-1/2 minutes, depending on the wattage of your microwave.* (Check cake after 40 seconds and only continue cooking if needed in 10-15 second intervals.) The cake is done when it is puffed up and the top of the cake is just dry.  Do not overcook. Remove cake from the microwave and allow to cool in the mug for about 1 minute before serving.  It can be eaten directly from the mug or placed on a serving plate.  Optional: Sprinkle with 1 teaspoon chopped or shaved dark chocolate and top with whipped cream or coconut cream flavored with vanilla and sweetened with stevia.

*To bake in the oven: Bake for 15-18 minutes at 350-degrees Fahrenheit until toothpick comes out clean and cake springs back when touched slightly off center.  Cool for at least 10 minutes before serving.

Nutritional Information per serving (1/2 cake, no toppings): 150 calories, 5.4 g carbohydrate (1.9 g dietary fiber, 0.8 g sugar), 13.5 g total fat (2.4 g saturated fat, 0 g trans fat), 93 mg cholesterol, 169 mg sodium, 44.1 mg calcium, 136 mg potassium, 5.4 g protein.  Net carbs per serving: 3.5 grams

Lemon Mug Cake



Cake from a microwave?  Can it really be good?  The answer is YES!  This is a very quick, easy and versatile recipe.  If served as a single serving, it's delicious as the main course for breakfast, brunch, a quick and light lunch or, when divided into two portions, it makes a perfect snack or dessert.  The addition of flaxseed boosts the nutritional complexity, making this cake an excellent source of dietary fiber, Omega 3 and 6 fatty acids, thiamine, magnesium, manganese and copper.  Who would guess that something that tastes so decadent would deliver such a healthy punch?  The cake is meant to be eaten warm, right out of the microwave or oven.  Top it with crushed raspberries, strawberries or blueberries for even more antioxidants, vitamins and fiber.  It's gluten free, sugar free, and low carb -- who could ask for more?

Lemon Mug Cake
Makes 1 meal-size serving (or 2 dessert servings)

1/4 cup almond flour (or finely ground almonds)
1 Tablespoon ground flaxseed meal
1 Tablespoon gluten free all-purpose baking mix
1/2 teaspoon GF baking powder
1 and 1/2 Tablespoons Splenda granular (or other sweetener of your choice)
1 teaspoon fresh lemon zest
1/2 Tablespoon salted butter, melted and cooled slightly
1 large egg
juice from 1/2 lemon (about 1 TB)

1. Spray an 8 ounce microwaveable or oven-proof ramekin or mug with non-stick vegetable spray: set aside.  (If making two servings, prepare two 1/2 cup custard cups or mugs.) 

2. In a small bowl, mix together the dry ingredients (almond flour through lemon zest).  With a fork, stir until well mixed.  In another bowl, beat the egg, melted butter and lemon juice until blended.  Add all at once to the dry ingredients and whisk with a fork until all the dry ingredients are moistened.  Pour batter into the prepared dish(es). 

3.  Microwave on high for 1 minute and check for doneness.  The cake will puff up and begin to release from the ramekin or mug along the edges.  The center should be puffed and almost set (the cake will continue to cook slightly after being removed from the microwave).  If the center is still sunken and soft, microwave for an additional 15 seconds.  The cake should spring back when touched slightly off center.  Do not overcook.  Remove from microwave and allow to cool for about 5 minutes before serving.  (Note: For two dessert-size servings, divide batter into two dishes and microwave on high for 40 seconds and then test for doneness.  If more cooking is required, microwave in 10 second intervals until desired consistency is reached.)

4.  For oven cooking: Preheat oven to 350-degrees. Bake for about 12-14 minutes or until center springs back when touched.  Cool for about 10 minutes before serving.

5.  Top with berries that have been crushed with the tines of a fork and sweetened with 1 teaspoon Splenda and whipped cream, if desired (optional).

Nutritional Information per entire recipe (1 meal-size serving, no toppings): 353 calories, 18.6 g total carbohydrate (6.1 g dietary fiber, 3 g sugar), 27.3 g total fat (6.1 g saturated fat, 0 g trans fat), 210 mg cholesterol, 298 mg sodium, 270.4 mg calcium, 35 mg potassium, 14.4 g protein.  (Note: For a dessert size serving, divide the batter into two dishes and cut the nutritional information by half.)
